Pesto or Pea Puree?
A lot of people close to me have dietary restrictions, allergies, and intolerances, and I know that they really appreciate it when a restaurant takes the time to educate its staff on what is in the various dishes, what precautions the cooks can take to avoid cross-contamination, and so on.

I bet it’s really frustrating for restaurants like that when, despite their best efforts to accommodate these restrictions, diners still get mad and blame them online for things that aren’t even true—for instance, when they mistake a spring pea puree for pesto and assume it must have cheese in it.
