Stuffed Pumpkin Peppers
Is there anything more adorable than little peppers playing dress-up for Halloween? I think not. These yummy stuffed peppers are a staple on many tables, and the ingenuity of making them pumpkins gets five stars from me. I wish I’d thought of it sooner! If you haven’t ever made these wicked fiends, it’s easy!

Hollow out your peppers and stuff them full of cooked ground meat, cream cheese, onions, and anything else that sounds good, then give them a thorough bake at 350 degrees for 45 minutes. I suggest carving them after cooking them; otherwise, you’ll lose a lot of yummy moisture, but it should work either way.
