In the early ‘80s, a spring break trip to Baja California changed Ralph Rubio’s life. There, he tasted his first fish taco—a crispy, golden delight wrapped in a warm tortilla. Inspired, he brought the flavors of Baja back to San Diego, opening Rubio’s Coastal Grill in 1983.
